Yesterday I made mouth-watering Cilantro Lime Black Bean Burgers and wanted to throw together some guacamole to serve on top. I came up with this delicious yet simple spinach guacamole, and it is so good!  You have to try it.

I am a huge guacamole fan, but have never before added spinach to the mix.  Yesterday I was struck by the idea to give it a try!  Adding the spinach deepened the green colour of the dip and significantly increased it’s nutritional value.  Spinach is a nutritional powerhouse and is an excellent source of iron, calcium, magnesium, folate, vitamin K and vitamin A.  Since it has such a mild taste, it is so easy to throw it into smoothies, dips and other dishes without it affecting the overall flavour.  Friends and family won’t even know it’s in there!

Ingredients
  1. 1 avocado
  2. large handful of fresh baby spinach
  3. ½ cup chopped onion
  4. 3-4 cloves garlic
  5. ½ lime, juiced
  6. ½ tsp Herbamare or sea salt
  7. 1 tsp pepper
Instructions
  1. Combine all ingredients into a food processor, and process on high until smooth.
  2. That’s it! This recipe is so easy. Enjoy!
