Yesterday I made mouth-watering Cilantro Lime Black Bean Burgers and wanted to throw together some guacamole to serve on top. I came up with this delicious yet simple spinach guacamole, and it is so good! You have to try it.
I am a huge guacamole fan, but have never before added spinach to the mix. Yesterday I was struck by the idea to give it a try! Adding the spinach deepened the green colour of the dip and significantly increased it’s nutritional value. Spinach is a nutritional powerhouse and is an excellent source of iron, calcium, magnesium, folate, vitamin K and vitamin A. Since it has such a mild taste, it is so easy to throw it into smoothies, dips and other dishes without it affecting the overall flavour. Friends and family won’t even know it’s in there!

- 1 avocado
- large handful of fresh baby spinach
- ½ cup chopped onion
- 3-4 cloves garlic
- ½ lime, juiced
- ½ tsp Herbamare or sea salt
- 1 tsp pepper
- Combine all ingredients into a food processor, and process on high until smooth.
