My husband and I just returned from attending Brendon Burchard’s “High Performance Academy” event in California, which was amazing! I absolutely love to travel and also have a gigantic passion for self-development. Spending time in sunny California, connecting to my greater vision and meeting so many inspirational people was a phenomenal way to spend Thanksgiving weekend!
It’s always very important to me to feel my best while I’m on a business or self-development trip, and that means starting my day with a healthy breakfast is of utmost importance! I know firsthand how difficult it can be to stick with a clean diet while on the road. I find that breakfast tends to be the most difficult meal to manage without advanced planning since hotel breakfasts are typically packed full of wheat, dairy, sugar and eggs.

Our room wasn’t equipped with a fridge or any other kitchen supplies on this trip, so our plans for hotel food prep needed to be kept very simple! Additionally, knowing that we wouldn’t have time for grocery shopping while in California meant that I needed to be extra prepared.
While meal planning for the four-day trip I decided that quick oats would be our best breakfast option due to their ease and simplicity of preparation. Unfortunately the majority of the store-bought options tend to be loaded with sugar and typically aren’t gluten-free. For this reason I decided to come up with my own quick and easy recipe for gluten-free apple cinnamon quick-oats. I used certified gluten-free quick oats, organic dried apples, raisins, cinnamon and nutmeg. So simple! The apples and raisins provide sweetness to this oatmeal so that other sugars are not required. All that’s required to be added is hot water (which we heated in a coffee maker as there was no kettle), and the apple cinnamon quick-oats served as a quick, tasty and nutritious breakfast for us every morning in the hotel!

Servings: 8
- 6 cups gluten-free quick oats
- 1-1/4 cups dried apple (unsulphured), chopped
- 1/2 cup raisins
- 4 tsp cinnamon
- 1 tsp nutmeg
- 1/2 tsp dried ginger
- 1-2 pinches salt
- Chop the dried apples by hand or throw them into a food processor and pulse until they are in small pieces (but not powdered).
- Add the chopped apples, oats, raisins and all of the spices into a large mixing bowl, stirring to combine.
- Store the quick-oats in a glass container or pack in ziploc bags for travel. To prepare, simply add approximately 1 cup of boiling water to a 1/2 cup of the dried oatmeal. Stir and let sit for 2-3 minutes to absorb the water and soften the oats. Enjoy!
